I am back at breakfast again. The hotel we stayed at on the island serves buffet breakfasts, it’s generally the same everyday, with some minor exceptions. So I have been trying to eat a balanced breakfast that follows the rules of paleo. The reason is for another post. But anyway, paleo eliminates grains, dairy, sugars and legumes. So following those guidelines here’s what’s been on my plate most mornings this week..
– a boiled egg
– sautéed greens
It’s amazing how fresh I have been feeling after a breakfast like that! Ah, breakfast-it is definitely my favourite meal of the day!
